Deep-steamed tea is the first step in making sencha from raw tea leaves, and is steamed for a longer time, from 1 to 3 minutes, as opposed to the usual 10 seconds to 1 minute. This allows more ingredients to ooze out of the tea leaves, resulting in a rich, mellow flavor. Also, because more ingredients are released, the water color becomes cloudy.
