Nanko plums from Wakayama Prefecture, Japan's number one plum producing region, are carefully washed and the stems are removed one by one by hand with a bamboo skewer.The plums are then layered alternately with rock sugar in a pickling barrel, and the raw plum syrup is created over time.
The concentrate has been aged for a long time and is diluted, so you can drink it straight.

Wakayama plums

Wakayama Prefecture's plums are number one in the nation in terms of both cultivation area (5,620 hectares (2009)) and shipping volume (68,800 tons (2009)), and are one of the prefecture's most famous specialties.

Within the prefecture, plums are grown in large quantities in Minabe Town and Tanabe City. The plums are shipped as green plums and also processed into pickled plums, with the main variety being "Nanko," which can be used both as green plums and for pickling.

Main varieties cultivated in Wakayama

  • "Nanko"
    With a soft skin and thick flesh, this is the highest quality variety of dried plum, and is a representative Wakayama variety that originated in Wakayama Prefecture (Minabe Town).It is a variety that is suitable for both juice and umeboshi.
  • "Gojiro"
    Harvesting begins in early June. The flesh is thick and the seeds are small, making them ideal for making plum juice and plum wine.
